Ingredients for 1 baking tray:
• 250 g of superfine flour
• 125 g of sugar
• 125 g of butter
• 1 pinch of salt
• The grated rind of half a lemon
• 1 egg and 1 yolk
• 1 small glass of grappa
• 1 egg white for brushing
• Walnuts and raisins or raisins to taste
Preparation time: 35 minutes
Put flour, sugar, cold butter cut into pieces, 1 whole egg, 1 egg yolk, a pinch of salt and the grappa in a bowl and knead to a mixture of large crumbs.
Knead briefly on a lightly floured surface, form a ball, wrap in clingfilm and put it in the fridge for a couple of hours. Spread the mixture to the thickness of 1 cm into a round shape with a diameter of 30-40 cm, then brush with beaten egg and sprinkle with granulated sugar.
Cook in the oven at 180 degrees for 20 minutes.
Serve cold and as is traditional, serve it with a shot of grappa.
